Ingredients

Please have ½ cup of dry white wine on hand
- 1½ cups water

3 cups broth
- 3 tablespoons olive oil

1 ounce Parmesan
- 1 cup carnaroli rice

Fresh white truffle

White truffle butter

1 packet S&P Seasoning
- 1 shallot
-
½ cup heavy cream
- Cutting board
- Knife
- 2 ounce ladle
- Large saute pan
- Wooden spoon
- 2 medium mixing bowls
- Whisk
- Cheese grater
- 2 quart sauce pot
- 1 measuring cup
- Kitchen towel
- Truffle shaver, cheese grater, or microplane
- Champagne vinegar or other favorite vinegar

PREP 🥒
In a small pot, bring the broth and 1½ cups water to a boil. Once boiling, turn off the heat.
- Meanwhile, whip the cream to soft peaks.
- Grate the Parmesan cheese.
- Peel and finely mince the shallot.
- Fill a mixing bowl with warm water and gently clean the white truffle.
HOW TO COOK 🍳
In a large saute pan over low heat, stir together the shallot, olive oil, and a pinch of S&P Seasoning. Cook until translucent and tender (but without any color).
- Add the rice and cook over low heat, stirring constantly, until the rice has a toasty aroma but no color.
- Deglaze the pan with the white wine, increase the heat to medium-high, and cook until all of the wine has evaporated.
- Reduce the heat to medium and add one ladle of hot stock.
- Cook until almost all of the liquid has evaporated, stirring constantly. Repeat this process until there is only ¼ cup of stock left.
- Turn the heat to low and add the white truffle butter, whipped cream, and Parmesan. Stir until homogenous.
- Add a couple drops of Champagne vinegar to heighten the taste.
Adjust the seasoning with S&P Seasoning.
